The austere, bone-dry characteristic in Champagne is not to everyone’s liking. Nor is the $50+ price tag. However, I have good new for fans of Champagne in the form of the Cremant below. Classy, elegant and excellent. Louis Bouillot is just one of the many traditional Burgundy houses that’s thriving under the control of Boisset.
