Prosecco is the current darling of the sparkling wine world. People who don’t even drink know the name. I love Prosecco as much as the next, but I’d like to put in a plug for another inexpensive and widely available sparkler that’s been around since day one ““ but which gets ignored.
~ I’d admit that the name Cava lacks the “˜fun-sounding’ appeal of Prosecco, and can be too-dry for some, but it is the true substitute for Champagne being produced by the Champagne Method (second fermentation in the bottle, minimum two years of ageing, whereas Prosecco is tank fermented and on the shelf after one year).
