Getting the Lightly Chilled Message

Wakefield, one of my favourite Aussie wineries, is touting the benefits of lightly chilling red wines. In this example ““ which is more about vitality than the usual sweet/smooth Shiraz, you’ll experience how light chilling kicks-up the wine’s bright flavours.

I find that putting a chill on reds adds a refreshing edge in the pre-dinner, sipping period ““ and at party-time. And it expands the food-friendly capacity of red wine to stuff other than beef or lamb. Try the spicy flavours in Promised Land with the blander white meats.
