Getting the Lightly Chilled Message

Wakefield, one of my favourite Aussie wineries, is touting the benefits of lightly chilling red wines. In this example – which is more about vitality than the usual sweet/smooth Shiraz, you’ll experience how light chilling kicks-up the wine’s bright flavours.

I find that putting a chill on reds adds a refreshing edge in the pre-dinner, sipping period – and at party-time. And it expands the food-friendly capacity of red wine to stuff other than beef or lamb. Try the spicy flavours in Promised Land with the blander white meats.
