Re-think Chardonnay

THIS CAVE COULD MAKE YOU RE-THINK CHARDONNAY

cave-chardWhen Cave Spring fist came on the scene 25 years-ago, they were seen as Niagara’s answer to Chablis, the home of non-oaked Chardonnay. Over the years they have become better know as the leaders in Ontario Riesling. As I sip on Cave’s 2011 Chardonnay I’m thinking they have found the answer to rebuilding a following for Chardonnay.

Not only is it in the light, non-oaked style, it is not far removed from Pinot Grigio. It’s a delicious sipping white. I can see a lot of Chardonnay producers “˜pulling back’ and crafting in the lighter, Pinot Grigio-style. Not sure if Cave planned this with their wine, but that’s how if feels. Happy sipping!
