There’s a movement in Australia to make the red wines less sweet, and less obviously ‘nice’. Also to reign in the ripeness of fruit so winemakers do not need to add acid for freshness. The wines will still have appealing flavours, but will feel a shade more dry, and European. Mitolo’s ‘Junior’ is a prime example. Certainly perfect with steak, but not too powerful for burger, pasta or ‘whatever’s going’.
