Louis Bouillot is a ‘traditional method’ sparkling producer in Burgundy (established business and less costs for grapes than Champagne), and in this case he sourced his grapes (Pinot Noir) from the south of France (even greater cost saver) – and that’s how.
The wine combines the classic austerity of Champagne with an easy drinkability – feels classy, but also sure to please friends and family at Holiday gatherings. But, I can see myself enjoying many bottles between now and than. Maybe you too!
